Tilapia Piccata is a healthy and fresh way to add lean protein to your diet. Chef Jovi’s recipe will please your guests and satisfy your hunger.
Ingredients:
- 4(6 once) Tilapia fillets
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tsp Almond Meal
- 2 tsp olive oil
- 1/3 cup white wine
- 2 tbs fresh lemon juice
- zest of 1/2 lemon
- 1 tbs drained and chopped capers
- 2 tbs coconut oil
- 4 cups of baby spinach
- 1 cup of brown rice
Preparation:
- In saucepan combine water bring to broil add the brown rice, 1/4 tsp salt , and 1/8 tsp pepper for 20 minutes
- Sprinkle the fish with the remaining of salt and pepper and coat the with the almond meal
- Heat the oil in non stick frying pan over a medium high heat
- Add fish and cook for about 2 minute each side
- Add the wine, lemon juice and zest and capers to the pan
- Cook for 1 minute and then add the butter
- Stir until the coconut oil melts
- Remove the fish and the sauce and keep warm
- Add the spinach to the pan, sauté until it is wilted
