Get a taste of Greece with our recipe for a fresh Mediterranean salad. Using fresh fish and veggies makes this a delicious option for summer lunches out by the pool.
Ingredients:
4 tomatoes
1 head of lettuce
3 cups potatoes
1 cups green beans
1 cup Ahi tuna
6 anchovy fillets
2 eggs
1/2 cup black olives
2 tb fresh green herbs
1 cup French dressing (Lemon Juice, Balsamic Vinegar, Press Garlic, and Olive Oil)
Preparation:
Broil the potatoes for 15 minutes or until ready, peel then quarter
Boil the green bean for 15 to 20 minutes
Wash, drain and sparate the lettuce leaves
Boil the eggs, peel them and cut in quarters
Drain the Anchovies
Quarter the tomatoes
Season the tomatoes and beans with French dressing
Season the lettuce leaves. Place them around a bowl
Arrange the potatoes in the bottom of the bowl
Decorate with beans, tomatoes , anchovies , eggs , black olives , fresh tuna or can tuna
